Creamy Swiss
Originally called "Saturday night cheese," our creamy Swiss is deliciously mild with an extra cream flavor. Back in the old days before dairy farms and cheese manufactures had mild cooling technologies, milk would arrive at the cheese house on Saturday evenings just after that days milking were completed. usually a days milking world be picked up the following morning and made into cheese, however, Sunday's were a day of rest and required special operations. So late on Saturday night, cheese makers throughout the valley would work late and turn the just arrived milk into cheese. in order to save several hours of work, the cream would not be separated from the milk but rather the whole milk would be used to make the cheese.
Today's technology had removed the Saturday night cheese maker's dilemma however folks still love the taste of our creamy swiss. It's a perfect addition to your party tray or favorite recipe.
