What makes the holes in Swiss Cheese?
Cultures added to milk produce a gas during the aging process. This gas is carbon dioxide, which forms the holes.
How much milk does it take to make a pound of cheese?
A gallon of milk weighs 8.6 lbs.  It takes approximately 10 lbs of milk to make one pound of cheese. The higher fat and moisture content of Colby cheese makes it a higher yielding cheese than Swiss cheese.
Does mold on cheese affect the cheese?
Hundreds of varieties of molds exist in nature. Mold spores grow when the host food is permitted to remain in an environment that provides the right temperatures, atmosphere, and nutrients to allow the spores grow into an easily identifiable mold.  Although unattractive and normally unappetizing, some molds are desired for their medicinal qualities or the flavors they add to certain foods especially cheese. Some cheeses like Blue Cheese actually have mold spores injected into the cheese. However for Swiss and Colby style cheeses mold will grow on surfaces exposed to air in both refrigerated and room temperatures. The mold can easily be cut off the surface without affecting the rest of the cheese.
How long will cheese keep when vacuum packed?
If factory vacuum packed, as in our display case, cheese will keep for about six months in a refrigerator or in the freezer, if sealed manually, cheese will keep up to three months in a refrigerator or in the freezer, if the seal is not broken.
Can you freeze cheese? For how long?
Most types of cheese can be frozen for later use without any quality problems. We suggest that only vacuum-sealed cheeses be frozen, however, well-wrapped cheeses could also be frozen. Thawing should be done slowly in a refrigerator. Swiss and Cheddar cheeses may show cracks or splits after freezing but the flavor should be fine. Six months in the freezer should be considered the limit for most cheese.
How long will cheese keep, if placed in refrigerator (not vacuum sealed)?
Cheese not vacuum-sealed, can be kept in the refrigerator from one to two weeks if properly wrapped.
How many pounds of cheese can you get out of one vat?
Each vat of cheese holds 1500 gallons  of milk which will make about 1260 pounds of cheese.
